MIDI stands far Musical Instrument Digital Interface. It is quite an old interface that is still very much in use today. It allows digital musical instruments to connect to a computer via a special MIDI port that looks somewhat like a traditional serial port.
By connecting an instrument to a MIDI port, the computer can recognize and record each individual note that is played and store them as "digital sheet music" in the .midi format. The computer contains a repository of sound samplings (called a Wave Table) that are then used to simulate the timbre of various instruments played to the tune of your digital sheet music. Since the .midi file does not contain any actual acoustic information and only digital representations of notes, the file size tends to be extremely small and the content can be easily manipulated using software.
The disadvantage is that different computers can have different Wave Tables which means that the timbre of the sound can change when playing the same .midi file on more than one computer.
There are many helpful resources online which go into much further detail about this. Unfortunately, I can't help you with the rest of your question since I have little experience with instruments.
